Actual COGS

Opening inventory value plus signed AP invoices and credit memos, plus signed transfers, less closing inventory value.

Theoretical COGS

Menu-item quantities sold multiplied through the R365 recipe hierarchy to ingredient-level theoretical usage and cost.

Variance

Actual COGS less theoretical COGS. A positive result means more cost was consumed than recipes and sales mix predict.
